Boa tarde pessoal, tenho um formulario de venda em contem um jTable, adiciono os itens tudo certinho, porém quando retiro um item da jTable e tento adicionar novamente dá o seguinte erro:

Está tentando converter uma String nula em algum dos parses ai do seu código.

Não entendi direito o motivo de você remover e retornar ali na sua JTable, mas acredito que você esteja pegando o campo txtP_unitario ou txtUnidades.getText() vazio no momento de efetuar esse método cálcula preço.

O que estou tentando fazer o seguinte, ao efectuar uma venda eu adiciono os itens pedidos numa jtable, isso funciona direito, mas quando retiro um item da lista de pedidos e tento adicionar outro ele retira todas linhas do jtable e da esse erro

Você pode colocar um evento MouseClicked na sua JTable e dentro desse método fazer o seguinte:

DefaultTableModel dtm = (DefaultTableModel)jTable1.getModel();
        if (jTable1.getSelectedRow() >= 0){
            dtm.removeRow(jTable1.getSelectedRow());
            jTable1.setModel(dtm);
        }else{
            JOptionPane.showMessageDialog(null, "Favor selecionar uma linha");
        }

Assim, você remove apenas a linha selecionada e não o restante do JTable (E também não perde a instância atual desta JTable).
